Rich is on his way to Boston for some hands-on tutelage on siphon coffee brewing this afternoon. The teacher is siphon master Simon Hsieh of Taiwan, who is here courtesy of the folks at barismo.com.
Siphon (vac pot) brewing is something we do a little of already with hopes to do much more down the road as part of a "tasting bar" idea we're developing.

Btw, we've already sold out of Flecha Roja Costa Rica Direct Trade in just two days. We still have a couple of bags of the Cruz del Sur Organic Peru Direct Trade. But don't count on them being there long.
Ok. Trying not to be pedantic here...but...awesome. In the strictest sense of the word. If I only strived for half the knowledge and excellence as the Aldo's family, I would still be shooting for the stars.

Sean - thanks for the compliment.
There's still plenty of room for improvement in everything. As far as pedantic; trying to better understand these methods hopefully means less risk of appearing dilettante-ish (as long as we're using big words!).

Now that steak sandwich would have made the trip worthwhile, all by itself. Truly the best steak sandwich in the country -- no chipped beef there. But I am guessing The Fours was NOT the place to be as the clock ticked down to zero in last night's Super Bowl.
